I have never been one to make packet mix anything. I prefer to make things from scratch, mostly so I will know it will be safe for me to eat. But sometimes, time is precious and you’ve got better things to do than put the needed time and effort into whipping something up yourself. So when I first found FODShop online, I had a browse through their packet mix goods, and saw the Orgran gluten free brownie mix and knew I had to give it a try. Since I found myself with more time than I expected the day I made them, I also experimented with a low FODMAP caramel. These low FODMAP caramel stuffed brownies were gone in less than 5 days, with the packet mix potentially rivalling my own recipe.
I was continuously hesitant to experiment with low FODMAP caramel since beginning this journey, because my healthier caramels in the past have all been made with dates, which are only safe in 8 gram servings. And if I’m going to have anything with caramel in it, I’m not going to settle for a measly 8 grams. I didn’t have much hope that my combination of coconut oil, maple syrup, almond butter and salt would taste like caramel, but I thought to myself, if it doesn’t work it’ll still taste good, right?
Needless to say my concern was pointless. This caramel is thick, gooey and tastes just like the real deal. Sandwiched between two layers of delicious, fudgy brownie, I would advise you to invest in one of those lock-boxes you can buy specifically for food. Maybe I should have put one on my Christmas list.

Caramel Stuffed Brownies
- 1 box Orgran gluten free chocolate brownie mix
- lactose free milk, eggs or chocolate to add to the brownie mix
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 2 tbsp almond butter
- pinch sea salt
To prepare the caramel, combine the coconut oil, maple syrup, almond butter and sea salt in a saucepan over medium heat. Simmer the mixture until it thickens and set it aside.
Prepare the brownie batter according to the packet instructions.
Spread half the brownie mixture into the greased tin. Spread the caramel on top and then cover with the remaining brownie mixture.
Bake until your brownies are the desired consistency.
