Cinnamon Sugar Cake Bites (Low FODMAP)
Ingredients
- 60 grams butter
- 1/4 cup brown sugar
- 1/4 cup caster sugar
- 1 egg
- 2 tbsp coconut yoghurt
- 1 tsp vanilla extract
- 1/2 cup oat flour
- 1/2 cup low FODMAP plain flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 3 tbsp each extra cinnamon and caster sugar, for dusting
Instructions

Remove the butter from the fridge and set it aside in a mixing bowl to soften.

Preheat the oven to 160C and grease a mini muffin pan. The mixture will make 18 so you may need to use 2 pans.

Add the sugars to the softened butter and cream them together with a handheld electric whisk until light and fluffy.

Add the egg, coconut yoghurt and vanilla and whisk until combined.

Add in the flours, baking powder and cinnamon and whisk until a smooth batter forms.

Using a cookie scoop, add dough to 18 holes of your mini muffin pan and bake for 16 minutes or until golden brown, domed and they spring back when touched.

Allow to cool in the tray before turning them out onto a wire rack to cool completely.

Combine the extra caster sugar and cinnamon in a small bowl and roll the cake bites in this mixture to dust. If you have trouble getting it to stick, you can roll the bites in a little melted butter first, and then the cinnamon sugar.
