Today’s post is going to be short and sweet, just like this recipe!
Pesto is one of those things that can save a dinner. Boring pasta? Add pesto! Boring chicken? Add pesto! Boring crackers and veggie sticks? Add pesto! You get my drift – pesto is the besto!
However, like most Italian dishes and additions, you require garlic. This is a big no-no for me.
But it’s so ridiculously easy to make your own. It’s fresh, fragrant and can brighten up any number of dishes. Best of all, it takes 5 minutes in a high speed blender or food processor and hey presto, you have pesto!
I’ll stop with the rhyming now, I promise.
Five Minute Pesto
Ingredients
- 1 handful baby spinach
- 10 leaves basil
- 2 tbsp pinenuts
- 10 walnuts
- juice of half a lemon
- 1 tbsp nutritional yeast
- 20 g parmesan
- 2 tbsp olive oil
- 2 tbsp water
Instructions

Place all ingredients in a high speed blender and combine, scraping down the sides as needed.
