Green Shakshuka (Low FODMAP, Gluten Free, Dairy Free)

Green Shakshuka

  • 3 eggs
  • 1.5 cups broccoli (heads only)
  • 1 handful kale or spinach can also use frozen
  • 30 grams frozen peas
  • 2 tbsp basil
  • 2 tbsp parsley
  • 20 grams butter
  • 1 tbsp lemon juice
  • salt, pepper, chilli flakes


  1. Finely chop the washed broccoli heads and kale/spinach and drain well.

  2. In a frying pan on the stovetop, melt the butter and add the broccoli and greens and saute until tender. Add the eggs and frozen peas and cook until the eggs are ready. You may need to place a lid on the pan or pop the pan in the oven to finish the eggs off.

  3. Season with basil, parsley, salt, pepper and chilli flakes and serve.
