Pan Fried Gnocchi

The amazing thing about Fod Shop is the convenience of finding amazing low FODMAP meal options in one place. Not long ago I made pan fried gnocchi with pesto, pumpkin and spinach using Simply Wize Potato Gnocchi that I found on Fod Shop. Follow the links to check out the Fod Shop website and the individual product!

If you’re anything like me, you’re not a huge fan of gluten free ready-make pasta because it either stays rock hard or turns into mush that seems to run out of the holes in your colander like water. However, you’ll be happy to hear I tested this gnocchi out and it was wonderful. Fantastic texture and taste – I wouldn’t have thought it was gluten free if the packet didn’t tell me and I didn’t experience any stomach pains.

I paired it with my low FODMAP and super easy pesto, baked pumpkin, spinach and pine nuts (all in FODMAP safe portions). The result was a big belly full of goodness and happiness and pain-free-ness. Which I wanted nothing more than to share with you all!

Total Time 50 minutes
Servings 3 people

  • 1 packet Simply Wize Potato Gnocchi
  • yield of my low FODMAP pesto
  • 130 grams butternut pumpkin

  1. Bake cubed butternut pumpkin in the oven until browned.

  2. Prepare your low FODMAP pesto (see link in post for the recipe) while you bring a saucepan of water to the boil on the stove.

  3. When the water is boiling, pour in the Simply Wize Potato Gnocchi. Cook it according to the packet instructions.

  4. Once you remove the gnocchi from the water, place them in a hot pan with a splash of olive oil to brown them.

  5. Add the pesto, pumpkin and spinach. Stir and serve with extra parmesan and black pepper.

Served it up on the weekend – huge hit! I’m an awful cook and it was still one of the easiest things to get right! Can’t recommend enough!
