PB&J Muesli Bites (Low FODMAP, Dairy Free)
Ingredients
- 1 cup dried strawberries check for any high FODMAP additions
- 1 cup pecans
- 1.5 cups rolled oats
- 2 tbsp chia seeds
- 3 tbsp pepitas
- 2 tbsp flax
- 3/4-1 cup peanut butter
- 1/4 cup rice malt syrup
- 1/4 cup melted coconut oil

Preheat the oven to 160C and grease or line a standard square baking tray.

In a high speed blender, blitz the strawberries, pecans and pepitas until they are chopped to your liking. The smaller the pieces, the easier your bites will stick together.

In a large mixing bowl, combine the melted coconut oil, peanut butter and rice malt syrup, stirring until smooth.

Add in all the dry ingredients, including the pieces from the blender, and fold through the wet ingredients until combined.

Place the mixture into the baking tray and spread and press down with a spoon or spatula until even and compacted.

Bake in the oven for around 15 minutes or until golden brown.

Leave to cool completely in the tray before turning out and cutting into pieces. Keep refrigerated until needed.
