Tikka-Inspired Chicken Curry (Low FODMAP)
- 1 tbsp olive oil
- 1 tsp garam masala
- 1 tsp paprika
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1 tsp ginger
- 1/2 tsp turmeric
- 1 common tomato
- 2 tbsp tomato paste
- 1/4 cup lactose free cream or yoghurt
- 250 grams chicken stir fry strips
- 1 cup jasmine rice uncooked
Rinse your rice and cook it according to the packet instructions.
In a frying pan, heat the olive oil and then add all spices and fry off until fragrant.
Add in the chicken and cook until lightly browned, stirring regularly to ensure the spices don't burn.
Turn the heat down to low and add in the tomato paste, chopped tomato and cream or yoghurt, and simmer for 10 minutes.
Serve with cooked rice, fresh coriander and a squeeze of lemon.
