Choc Chip Granola
Ingredients
- 2 dried figs
- 1/4 cup peanut butter I use Mayvers
- 2 tbsp maple syrup
- 1/2 cup oats Uncle Toby's are low FODMAP
- 1/4 cup raw almonds
- 1/4 cup macadamias
- 2 tbsp pumpkin seeds
- 50 grams dark chocolate chips
- pinch salt
- 1 tbsp cinnamon
Instructions

Preheat the oven to 160 degrees Celsius fan forced, and line a standard baking tray.

Soak your dried figs in boiling water for about 10 minutes to soften. While they are softening, roughly chop the almonds and macadamias.

Once soft, drain the figs and in a large mixing bowl, mash them with a fork.

Add the peanut butter and maple syrup and combine until a smooth mixture forms.

Add the oats, chopped nuts, pumpkin seeds, salt and cinnamon and stir until all ingredients are coated in the wet ingredients evenly.

Spread the mixture out onto a baking tray and bake in the oven for 6 minutes, before you flip the granola with a spatula and bake for a further 6 minutes.

You can either add the chocolate chips while the granola is warm so that the chocolate melts, or when it has cooled to keep the chips whole.
