Chunky Chocolate Cookies
Chunky, chocolatey, cookie...ey cookies
- 55 grams butter, softened
- 1/4 cup caster sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tbsp cacao
- 1 cup low FODMAP plain flour
- 1/4 tsp vanilla
- 1 tsp salt
- 1 tsp baking powder
- 140 grams milk chocolate
In a mixing bowl, use an electric whisk to cream together butter and sugars.
Add the egg and whisk until light and creamy.
Add the cacao, flour, vanilla, salt and baking powder and use the whisk to mix into a smooth dough.
Roughly chop the chocolate and fold it through the dough.
Using a cookie scoop, portion out 8 cookies and place them on a lined baking tray. Refrigerate for 30 minutes. Preheat the oven to 180C halfway through chilling time.
After chilling, bake the cookies in the oven for approximately 8 minutes or until they reach your desired cookie consistency. Leave them on the tray to cool - they will continue to harden as they do.
