Handmade Gnocchi (Low FODMAP)

Handmade Gnocchi

  • 3 unwashed potatoes
  • 1-1.5 cups low FODMAP plain flour
  • 1 egg
  • pinch salt


  1. Scrub the potatoes under running water, and then submerge them in water in a large saucepan without peeling them.

  2. Boil the potatoes until they are tender and you can pierce them with a fork.

  3. Drain them and set them aside to cool. When cold, peel the skins off the potatoes and discard them.

  4. Using a large grater, grate the potatoes onto a floured surface and make a well in the middle.

  5. Crack the egg into the well, and add the salt and 1/2 cup of flour at a time and mix it in with the potatoes. At a certain point you will need to begin kneading the dough, but only add enough flour so that the dough is no longer sticky.

  6. Fill a saucepan with water and set it to boil over a high heat.

  7. Using your hands, pinch off small handfuls of dough and roll them out in long sausages. Using a sharp knife, cut the sausage into small pillows.

  8. Drop the gnocchi around 15 at a time into the water once it is boiling, and wait until they float to the top. Once they do, scoop them out of the water and drain them on some paper towel.

  9. Serve with your favourite pasta sauce.
