For those days when you just can't be bothered to scoop out individual cookies - make one giant one! The low FODMAP skillet cookie of your dreams.
Makes: 12 servings (low FODMAP serving size: 1 slice)
- Preheat the oven to 180C and grease a 20cm (diameter) pie dish or skillet.
- In a large, microwave safe bowl, melt the butter.
- Add the sugars, egg and vanilla and whisk vigorously until smooth and combined.
- Sift in the flour and add the baking powder and salt. Stir until a batter forms.
- Add the chocolate chips and fold through the batter until evenly distributed.
- Transfer the dough into the greased skillet or dish and spread it out evenly using a spatula or your hands.
- Bake for approximately 25 minutes or until crispy at the edges and still gooey in the middle.
