Makes: 9 muffins (Low FODMAP serving size: 1 muffin)
- Preheat the oven to 160C and grease and line 9 holes of a standard muffin pan.
- Add the banana(s) to a large mixing bowl and mash until smooth.
- Add the egg, milk and vanilla and whisk to combine.
- Add the caster sugar and sift in the flours, cinnamon and salt. Stir until a smooth batter forms.
- Fold through the chocolate chips until evenly incorporated.
- Divide the batter evenly between the 9 muffin cases.
- Bake for 30 minutes or until golden brown.
